Prosciutto, Mozzarella, and Sage Pesto Stuffed Pork Tenderloin
Author: Katie Morris of Katie at the Kitchen Door
Serves: 4
One pork tenderloin, about 1-2 pounds
1 bunch fresh sage
6 sprigs fresh rosemary
15 sprigs fresh thyme
4 cloves garlic
6 tablespoons olive oil, divided
sea salt and pepper
6-8 thin slices of prosciutto
6 thin slices fresh mozzarella
1. Remove the leaves from the sage, rosemary, and thyme. Place the herb leaves in a food processor with the garlic and 3 tablespoons of the olive oil. Pulse the herbs until a finely minced rub is formed. Season the herb mixture with salt and pepper.

2. Rub one half of the herb mixture on the inside of the prepared pork tenderloin. Top with slices of mozzarella, slightly overlapping, and then with slices of prosciutto. Carefully roll the pork tenderloin up as you would a jelly roll, tucking the filling back in as needed. Use butcher's twine to tie the pork into a roll, using one piece of twine every 2-inches. Rub the remaining half of the herb mixture on the outside of the pork and marinate the pork in the fridge for at least eight hours.

3. Preheat the oven to 375 degrees F. Heat the remaining 3 tablespoons of olive oil in a Dutch oven or other oven-proof skillet. Brown the pork on all sides, then place the Dutch oven in the preheated oven until the internal temperature reaches 145?F, about 20-30 minutes. Remove the pork from the oven and let rest for 10 minutes, then slice and serve.

Amazing Grapes

Health benefits of grapes

  • Grapes are rich in a polyphenolic phytochemical compound called resveratrol. Resveratrol is a very powerful anti-oxidant which has been found to play a protective role against cancers of colon and prostate. Resveratrol also plays a key protective role in preventing coronary heart disease (CHD), degenerative nerve disease, Alzheimer's disease and viral/ fungal infections.
  • Resveratrol reduces stroke risk by altering the molecular mechanisms inside the blood vessels. It does this by reducing the susceptibility to damage of blood vessel walls through decreased activity of angiotensin (a systemic hormone causing blood vessel constriction that would otherwise elevate blood pressure) and secondly, through increased production of a vasodilator substance called nitric oxide (a beneficial compound that causes relaxation of blood vessels).
  • Anthocyanins are another class of polyphenolic anti-oxidants present in abundance in the red grapes. These phyto-chemicals have been found to have an anti-allergic, anti-inflammatory, anti-microbial, as well as anti-cancer activity.
  • Catechins, a type of flavonoid tannin group of anti-oxidants, found in the white/green grape varieties also possess many health-protective functions.
  • In addition, grapes are very low in calories. 100 g fresh grapes just provide 69 calories but zero cholesterol levels.
  • Grapes are rich source of micronutrient minerals like copper, iron and manganese. Copper and manganese are an essential co-factor of antioxidant enzyme, superoxide dismutase.  When the body stops producing copper and other minerals the hair begins to gray.  Supplementation of these minerals may reduce the speed at which the aging process occurrs. Iron is especially concentrated in raisins. In addition, 100 g of fresh grapes contain about 191 mg of health benefiting electrolyte, potassium.
  • They are an also good source of vitamin-C, vitamin A, vitamin K, carotenes, B-complex vitamins such as pyridoxine, riboflavin, and thiamin.

There are times in our lives that give us pause, and we think to ourselves: “What happened to the happy-go lucky college graduate out to show the world? I’m struggling with strange feelings, moods and emotions that I don’t understand.” Others may say, “How did our relationship change? We used to have fun and enjoy each other’s company and now we are living like two strangers.” Still others may think “I had such high hopes for my child, so smart and full of energy. Now he lacks focus, doesn’t listen the way he used to, sometimes talks back to me and gets into trouble at school. ” For individuals and families the decision to enter therapy can be a difficult one. Someone struggling with anxiety, depression, serious relationship conflict, a trauma disorder or a child’s behavior problem may not seek services right away for a variety of reasons.
